They do it in machines, and machines get hot, the garlic gets hot and bitter. No bueno. So, how do you do this yourself? It's really pretty easy. There's garlic presses that people like. I think they're just too hard to clean and a little bit of a pain in the tookus. The way I like to do it. I just give the garlic a little tap, so you can peel it. Once the skin comes off, on a bigger clove, I'm going to split it like that, lay it down on its flat end. Put my knife on top of it, give it a smash. Garlic is chopped and minced. If you don't want to get that physical with your garlic, which I know some people don't, you can also take that clove and use a handy dandy microplane like so.
