[0:18]Hello, guys. And welcome back to my Copenhagen home. Long time no see. I hope you're all doing well. I made myself a cup of matcha and I'm having a very cozy morning with my puppy, with my little baby. I love her so much, but I didn't realize how much you guys also love her. But she is also the sweetest, most gentle cat ever. And I missed her so much while we were in Australia and it feels so amazing to be back. I feel like she's become a little bit more cuddly compared to when she was a bit younger. And my mom always told me that, you know, when cats get older, they become more and more cuddly. And that makes me so happy. I love that she's like sleeping closer to us, laying on top of my stomach and purring. Anyways, I am back into my little bedroom, my cozy corner where I always sit down with you guys and chat. I've honestly missed it and it's been so nice settling back home here in Copenhagen. It's been like a week since we got back home, and I'm already like a little bit sick. I don't know if you can hear it. But I guess it's because of like the temperature change, you know, I was in the sunny weather in Australia and coming back home to quite cold Copenhagen. But I'm not complaining. It's honestly been quite nice. Like every single day when we've woken up, the sun is like beaming into the apartment. Because the sun like rises in this direction and it comes directly into our living room. So when we wake up, we can see like the golden color in the living room and honestly, it just makes me so happy that spring is already here. We basically skipped the most dreadful time during, you know, winter here in Copenhagen. I'm honestly so happy we decided to go to Australia, and I feel like I didn't properly talk to you guys about like leaving Australia and going back home. And like, you know, reflecting on the past three months, but basically, the months that we stayed in Australia were absolutely incredible. Like I did not expect to fall in love with Sydney as much as I did, and Helge also feels the same. And it's just such a special place and we could definitely see ourselves living there again. But we'll see what happens in the future, maybe one day, we'll be back in Sydney. But for now, we are really happy to be back in our apartment with Matilda here in Copenhagen. I'm going to do a bit of pilates in the living room on my mat. I have been doing all of my pilates classes at home for now. I have a membership at this platform called the Pilates class. And it's really nice. I actually canceled my membership to the Pilates studio that I've been attending like for two years here in Copenhagen. I did it a bit impulsively while I was in Sydney because I think now when I've tried the classes in Sydney, I was just a little bit frustrated to settle for the ones that I've been attending here in Copenhagen. Maybe there are other studios, but the one that I have been going to feels a bit more like you're going to the gym. It's more like a cardio and they play like super loud music and it's so fast paced compared to like in Sydney. I felt like it was a little bit more mindful and, you know, you could really feel that you were penetrating your muscles and it was a little bit more slow. So yeah, I've just been doing my pilates at home for now. But if you guys have any recommendations on really good Pilates studios here in Copenhagen, then please let me know in the comments. But I was also thinking about signing to Class Pass, which I did in Sydney. It's where you can like buy membership and you can go to different classes, which I think is pretty nice. So you can like change up your workout routine and also just go to different studios. Okay, so I'm going to change and get some workout done.

It's basically like quick granola where you mash a banana and blend an egg and some oats, and then you cook it on a pan and then you have granola. And I'm going to put some Greek yogurt, some cashew butter and some apples and some cinnamon.
[8:09]I recently got this new journal from a brand called Elisio. If I'm being honest, I haven't been journaling the past few weeks because we went to Melbourne and we were traveling back home. And I just haven't really been in a routine. This morning, I started writing and it's like a guided journal. So you write every morning and evening. And at the end of the week, it has like this Sunday reset where it asks you a bunch of questions about the past week. I'm excited to get back into journaling because it is truly amazing and I want to have it a part of my routine.
[9:02]Okay, I am going to get dressed because we wanted to get out of the house. There are a few new cafes here in Copenhagen that we haven't tried out because they opened while we were in Australia. And there is this place called Lele. It's supposedly a cafe and a vintage store. So I'm really excited to go check out that one. I'm going to wear my new red sweater and I think I'm going to pair it with my dark blue jeans.
[10:39]Okay, guys, I am going to make some dinner and I wanted to do something quite simple and comforting. So I'm going to make a one pan Greek chicken and potatoes. It's basically where you cut some potatoes, throw some chicken thighs into the oven, and then you make some tsatsiki, and it's ready. Super simple and it looks very yummy. So we're going to test out this recipe tonight. And Miss Matilda is joining the dinner party. I think she's hungry and that's why she is like give me food. Give me food. I have some chicken thighs, Greek yogurt, cucumber, dill, potatoes. And I think it's going to be super simple.
[12:15]Tsatsiki is ready. I have never made a proper tsatsiki. I've only made something completely different where I like mix like yogurt with some garlic, lemon and stuff. But I have never grated a cucumber and made tsatsiki. So, let's give it a taste test. Mmm. Oh my gosh. Yum. Yummy.
[13:03]I just made some ginger and lemon tea, and I'm set on my bed with my old computer. I found it in the closet after we got back home from Australia, when I was moving some stuff around. And I realized that I have Sims on that computer, and I haven't played Sims in forever. And I am the biggest Sims fan. I've played it since I was young, like I used to play Sims 2 on like my mom's desk computer, and I used to have like my best friends come over and we would play Sims for many, many hours. But then I got into Sims 3, and that was even more fun, and now I'm playing Sims 4. And to be honest, I feel like it's a little bit too real in a way. I think I prefer The Sims 3, but I don't know if it's like too old now. I haven't really sat down and just played Sims because I'm always so busy with other stuff. But I really want to get back into it because I honestly really love Sims, even though it's maybe better to get off screen and do something else, you know, get into knitting or read a book or something. But in a way, I just really miss playing Sims because it's also about like being creative and like creating, you know, this family, it doesn't necessarily have to be a family. But it's just so fun and also building a home and also playing the game. When people used to ask me like what is my favorite part about Sims, you know, is it creating the characters, building the house or playing? I think I would say I love playing the game the most, and I always used to use like this cheat code called Motherlode, where you could get like a bunch of money. And then you would be able to build like mansions and I don't know, I think it's just so fun like creating a family. And Sims is just the best game, you know, so I wanted to get back into it, and Helge is at a basketball practice. He goes like every week, and he plays with Icelandic guys, and it's just more for fun, but it's really cute. Oh my God, I can hear my voice. I feel like I'm getting sick. I'm going to drink my tea, and play some Sims. Oh my God, I'm so excited. Matilda is playing Sims with me. This is the character I created. Her name is Vanessa.
