And that's because you're not going to run up to a mob, take out your weapon, and then start killing it, but rather have the axe out before even approaching the enemy. And you can make it even faster if, after the first axe crit, you switch to a sword and crit with the sword. In which case, the iron sword is again the same as a stone sword. The only time an iron sword is optimal is in Bedrock Edition, where for some reason it does seven damage, which is like a diamond sword in Java.
