[0:00]Hello, my name is Brian Johnson. I'm one of the educators at the Idaho Potato Museum. And today, I'd like to tell you about the five types of potatoes. And the first one we're going to talk about is the russet. Russets are an ideal baking potato. They have a nice thick skin on them. So when you're baking them, they'll hold their shape and they come out really nice and fluffy on the inside. You can also use them for mashing because of their light, fluffy texture. They hold a lot of air when you're mashing them and make wonderful mashed potatoes. They're also good for french fries, not as much for potato salad, but they do make wonderful chips. And we actually call this a russet Burbank. And that's because it was originally discovered by a gentleman by the name of Luther Burbank, back in the 1870s. The next potato we're going to talk about is a red potato. This is what we call a red La Soda. Red potatoes have a very thin skin, which makes them very ideal for roasting. You can boil them whole and put them in stews or soups. And they're wonderful for potato salad because they hold their shape really well. So if you boil them and chop them up for a potato salad, they'll hold their shape nicely, instead of getting all mushy. The next one we're going to talk about is called a yellow or a gold potato. This is what we call a Yukon Gold. Yellow potatoes are kind of an all-purpose potato. You can mash them, you can roast them. And they're really good for boiling. They also work really well for potato salad. Again, they hold their shape really well. They're a nice creamy texture, and they work really well for pretty much anything. The next one we're going to talk about is a white potato. This is called a white Rose. And this is a very thin skin on this potato as well. White potatoes are really good for boiling. So if you're making a stew or a soup or something like that, they're wonderful. They also work well for mashing, and they make wonderful chips. They're not quite as good for french fries, because they don't have the nice thick skin that a russet has. But they do work really well for potato salad because they do hold their shape well. And the last one we're going to talk about are what we call fingerling potatoes. This is called a Russian Banana. And it's called a fingerling because it literally looks like a finger. Fingerlings are a very good potato for roasting. They have a nice thin skin on them. You can also boil them or steam them. They also make excellent potato salad. They hold their shape very well and are very good for that. And you can also bake these, but they're very small. So when you bake them, you're usually baking quite a few of them at once. And these are the five different types of potatoes that we grow here in Idaho. Thank you for watching.
